Bread and butter science

Flicking through the what's new at Waitrose magazine that came with the Ocado order, there's more chemistry than I expect. First there's bread enriched with selenium (dug into the soil rather than sprayed on the wheat). And then they explain why Kerrygold soft butter doesn't need the usual mix of oil to make it spread from the fridge. Summer milk contains smaller fat crystals which they churn for longer to get an emulsion. Tasty, nutritious and good for your science knowledge!
